Enjoy this flavorful french onion flavored rice, baked with savory chicken thighs! It’s a quick and easy meal the whole family will enjoy. Chicken thighs are usually my go-to because they’re more affordable and my husband prefers dark meat. If thighs aren’t your favorite, use your preferred chicken type.

Ingredients
2 lbs boneless skinless chicken thighs
Salt
Pepper
Garlic powder
Onion Powder
Dried Parsley
Paprika
1 1/4 cups long-grain rice
1 3/4 cup chicken broth
(1) 10.5 ounce can of french onion soup
1 stick salted butter
Chopped parsley for garnish
Directions
Preheat oven to 425 degrees.
Add the rice, chicken broth, and onion soup to a 9X13 baking dish and stir until combined.
Cut the stick of butter into small squares and place them along the top of the rice and soup mixture.
Cover with foil and bake at 425 for 25 minutes.
While the rice is cooking, coat your chicken thighs on both sides with a generous amount of salt, pepper, garlic powder, onion powder, paprika, and dried parsley.
Once the 25 minutes have passed, remove the rice from the oven and place the seasoned chicken thighs over the top of the rice.
Bake the chicken and rice uncovered at 450 degrees for about 20 minutes or until the chicken reaches an internal temperature of 165 and everything is roasted and golden.
Garnish with chopped parsley and enjoy!
Tip
If time allows, consider searing the chicken thighs in a skillet before baking in the oven to add extra flavor and crispness to the chicken!
